Crystalline fructose is high-purity (above 97%) fructose, a kind of monosaccharide, which is an isomer of glucose. Its sweetness is 1.2 to 1.8 times that of sucrose. It naturally exists in the juice of fruits, honey and grains.
In terms of medical treatment, it has been included in the Pharmacopoeia of Europe, the United States and other countries, as an oral agent or injection.
Crystalline fructose is suitable for functional drinks, candied fruit, high-end pet food and health food, fruit wine, fruit vinegar brewing, etc. The freezing point of crystallized fructose solution is lower than other sugars (such as sucrose). With 3% crystallization, the freezing point of fructose solution is -5 ºC, and the freezing point of 3% sucrose solution is 3 ºC. This feature makes it not form hard ice cubes when it is applied to ice cream and other cold drinks, and can avoid ice crystals, making the product soft.
